Hey, I'm Kaitlin.  Welcome to my blog about eating healthy, whole foods in everyday real life...you know, with a real budget, real time constraints, and real cravings for pizza, not kale.  

About the Blog 
Real Food, Unwrapped was born out of a desire to track the recipes and tricks that are working for me as I learn to feed my family well with whole foods.  I’ve experienced what a daunting task it can be to make the switch from processed foods to a diet that often requires a lot more time in the kitchen, money out of your pocket, and discipline in your everyday choices.  I’m certainly still in the middle of it!  So far I’ve found that some parts of eating healthy are easy and delicious, others take work and willpower.  I think that alone can make the question of whether it really even matters a pretty critical one.  I really believe that it's equally important to know why you're doing something as it is to have the resources to help you put it into practice - so you'll find a bit of both here.     

To help with my own personal health issues, I currently avoid gluten, dairy, and keep sugar to a minimum in order to balance my blood sugar.  But I often cook some old favorites with whole wheat and dairy to treat my husband and save us some money.  That means you can expect a mix of traditional and allergen-free foods to show up around these parts, as well as plenty of vegetables, whole grains, healthy fats and tips for how to make beneficial changes even when you can't spend more.

About Me
Despite originally thinking I would get a PhD, conquer the world, and maybe start looking at boys when I was 30, I married Steven straight out of college and have lived a simple, ordinary life in Georgia ever since.  I have a degree in engineering but have spent the majority of my time post college reading about nutrition, cooking from scratch, and learning that sometimes shattered dreams are the biggest blessings.  I struggle with chronic fatigue, brain fog, migraines, and depression, and there have been some rough, rough times.  Even though making changes to my diet has helped me quite a bit, there are still some really hard days.  But oh what a glorious silver lining there is.  These physical struggles have been the thorn in my side ever pushing me back into the arms of Jesus, and for that I am so grateful. There isn't anything more good and glorious and essential to life...not even food.
